Vegan Gluten Replacement

Can You Use This Recipe Without a Bread Machine?

This recipe is specifically adapted to be made using a bread machine. 

However, the ingredients listed can be used to make oven-baked vegan bread, but the steps will need to be slightly adjusted.

Instead of combining all the ingredients, you would need to activate the yeast first by adding it to 10 tablespoons of warm water. Similarly, you would need to make the flaxseed egg mixture separately by combining the 2 tablespoons of flax with 6 tablespoons of water. 

The rest of the steps will remain the same. 

Another key difference to keep in mind is that you will need to give the bread dough time to rise in a warm place until it doubles in size, which usually takes around 1-2 hours. 

Once the dough has doubled in size, place it in a prepared loaf pan and bake it for 45-55 minutes at 375°F (190°C). 

All in all, while this recipe can be adapted to be used for oven-baked bread, we recommend using a bread machine for the best results. 

How Long Does This Bread Stay Fresh?

This gluten-free vegan bread can stay fresh for about 3 to 4 days when stored properly. To maximize its freshness and shelf life, allow the bread to cool completely before storing it, and wrap it tightly in plastic wrap or place it in an airtight container. This helps prevent condensation, which can lead to a soggy texture, and prevents it from drying out. No one likes hard, stale bread!

How to Make Vegan, Gluten-Free Bread Using a Bread Machine

Baking Time: 2-3 hours (depending on your bread machine)

1 3/4 cups gluten-free all-purpose flour blend

1/2 cup almond flour

1/2 cup tapioca flour

2 tablespoons ground flaxseed

1 teaspoon xanthan gum

1 tablespoon psyllium husk powder

1 1/2 teaspoons instant yeast

1 teaspoon salt

1 1/4 cups warm water

2 tablespoons maple syrup or agave nectar

2 tablespoons olive oil

Instructions:

  1. In a large bowl, combine the dry ingredients, including the gluten-free all-purpose flour, almond flour, tapioca flour, ground flaxseed, xanthan gum, psyllium husk powder, instant yeast, and salt. Give it a good mix. 
  1. Next, in a separate small bowl, whisk together the warm water, maple syrup or agave nectar, and olive oil.
  1. Now, pour the wet ingredients into the bread machine pan.
  1. Gradually add the dry ingredient mixture into the pan of the bread maker, ensuring that the wet ingredients are fully covered. Use a spatula to scrape down the sides, if needed.
  1. Place the bread pan into the machine and select the gluten-free setting (or a similar setting suitable for gluten-free bread). Set the crust color and loaf size according to your preference.
  1. Start the bread machine and let it run through the full cycle, including the kneading, rising, and baking phases. This usually takes around 2 to 3 hours, depending on the bread machine model.
  1. Once the baking cycle is complete, carefully remove the bread pan from the machine and let it cool for a few minutes. Then, transfer the bread to a wire rack to cool completely, at room temperature, before tucking in.
